What a Phoenix summer asks of it.
A built-in refrigerator is engineered for a kitchen. This is what the heat actually changes — taken from the manufacturers’ own service data, not from folklore.

The room it expects
Sub-Zero’s service manual for the Built-In 600-2 series tells technicians to advise owners that the unit performs best in a room between 60°F and 90°F. A Phoenix garage in July is not that room.
Running time at 90°F
Monogram’s service data for its ZIS side-by-side models: in a 70°F room the compressor runs 41–46% of the time; at 90°F, 53–55%. Twenty degrees of room buys roughly a quarter more work.
The floor, as well
The same Monogram guide treats a room below 55°F as a low-ambient condition. A garage unit can misbehave on a January night as readily as on an August afternoon.
The machine keeps a diary
The Sub-Zero 600-2 control stores average temperatures in two-hour intervals, going back more than a week, and flags every interval in which the power was interrupted.
Dust is the quiet fault.
A condenser gets rid of heat by moving room air across a coil. Coat that coil in fine desert dust and it sheds less heat, so the compressor runs longer to hold the same temperature — in exactly the months when the room is already working against it.
All three manufacturers write it into their service data. Sub-Zero lists a dirty condenser under condenser airflow when a compartment runs warm. Viking lists it for a refrigerator running warm and for a unit that runs continually. Monogram’s guide says a normal home needs no routine condenser cleaning — but that in a dusty or greasy environment it should be cleaned periodically. A desert summer of dust storms qualifies.
With the power off, a soft brush across the grille is owner’s work — Monogram’s guide says an ordinary appliance brush is all that is needed. Anything behind a panel is not.
When the monsoon takes the power.
After an outage the real question is how warm the food got, and for how long. On most refrigerators nobody can answer it. On a Sub-Zero Built-In 600-2 the control can: its temperature log survives the power cut, and a technician can read compartment temperatures back two hours at a time and see exactly when the power was out.
Until the power returns, keep the doors closed. USDA guidance is that a closed refrigerator keeps food safe for up to four hours, and a full freezer holds its temperature for about 48 hours — 24 if it is half full.
When the power comes back, write down anything on the display before switching the unit off and on. On the 600-2, a power cycle clears the flashing SERVICE indicator you would otherwise have told us about. What to keep and what to throw out, by the USDA chart: after a power outage.
Five Checks Before You Call
- 01 Is the room above 90°F? room range
- 02 Did a large, warm load of groceries go in today? warm food load
- 03 Does every door and drawer close fully? door ajar
- 04 Is the grille clear, and free of dust? condenser airflow
- 05 Has it had 24 hours since a setting was changed? time to stabilize
These are the causes the manuals list before any failed part. If all five are fine and it is still running warm, that is the moment to call — and exactly what the $119 visit is for. If one of them was the answer, you have kept the $119.
Where a built-in should not live.
An indoor built-in fitted in an uncooled garage, a ramada or an outdoor kitchen spends the summer outside the room its maker describes. It may keep running; it will be running hard, and it is often the first unit in the house to need us.
If an outdoor kitchen is still on paper, ask for a unit rated for outdoor use before any stone is cut around it. It is far cheaper to decide now than to rebuild a surround later.
